Raw Granola

I like to call this “the lazy person’s granola”. No need for turning on your oven and heating up your house, roasting the oats and making a total mess of the kitchen. For this raw granola recipe you literally put everything into a food processor and you’re done… That’s it!

I absolutely LOVE granola and my favorite way to eat it is on top of a homemade acai/ pitaya bowl or with almond milk and fresh banana slices. You can also eat this granola simply with a spoon and your mouth, no need to complicate things! Now let’s get down to business.

Raw Granola

Makes about 1 1/2-2 cups

3/4 cup gluten-free rolled oats

6-7 dates, pitted and sliced in half

1 tbsp pumpkin seeds

1 tbsp chia seeds

2 tbsp raisins (no sugar added)

1 tbsp + 1 tsp virgin unrefined coconut oil

1/4 tsp cinnamon

Directions:

Place all ingredients in a food processor and blend until everything is well combined.

Dump the granola out in a bowl and squeeze it together with your hands pressing the granola so everything sticks and begins to crumble.

Transer the granola to a mason jar and store in your refrigerator for up to two weeks. Enjoy!
